Sundays here are all about grassroots football: families wrapped up in scarves, kids kicking a ball on the sidelines, and everyone having a good laugh together. With their crisp shells, chewy centres and luxurious fillings, these little French treats have captured hearts far beyond the streets of Paris. And guess what? You don’t need to step into a Parisian pâtisserie to enjoy them. At Halcyon Retreat, each of our holiday apartments comes with a fully fitted kitchen – perfect for guests who want to roll up their sleeves and enjoy a little French flair right at home. Whether you’re an experienced baker or just in the mood to try something new with the kids, macarons are a beautiful (and fun!) way to spend an afternoon. What makes the perfect macaron? Smooth, shiny tops The famous “collerette” (that little frilly foot at the base) A crisp bite followed by a soft, melt-in-the-mouth centre And of course, a delicious filling – try chocolate ganache, lemon curd, or raspberry buttercream Want to give them a try? Here’s our simplified recipe: Ingredients: 100g egg whites (aged 1–2 days in the fridge works best) 100g caster sugar 100g ground almonds 100g icing sugar A pinch of salt Food colouring (optional) For the filling: Pick your favourite! A simple chocolate ganache (equal parts cream and dark chocolate) or ready-made jam both work beautifully. Method: Whip the egg whites with a pinch of salt until they start to foam. Slowly add in the caster sugar while whisking until stiff peaks form. At this stage, you can gently fold in a few drops of gel food colouring if you’d like to give your macarons a vibrant hue — just be sure to mix carefully so you don’t deflate the meringue. Sift and fold in the ground almonds and icing sugar. Gently mix until your batter flows like a thick ribbon – this is called macaronnage. Pipe small circles onto baking paper and tap the tray to remove air bubbles. Rest them for 30–60 minutes until the tops are no longer sticky. This helps create that signature rise and collerette in the oven. Bake at 150°C (fan) for around 12–14 minutes. Let cool completely before filling. Rich, warming and full of rustic French charm, Boeuf Bourguignon is a dish that was made for slow afternoons and even slower glasses of red wine. While the recipe itself hails from Burgundy, there’s no better place to try your hand at it than right here—in the heart of beef country. So, tie on your apron, pour yourself a glass of something local, and let’s bring a little bit of French tradition into your home-from-home. Why Boeuf Bourguignon? Traditional Boeuf Bourguignon (Serves 4) Ingredients: 800g of Limousin beef (chuck, beef cheek or shin are ideal) 200g smoked lardons (or diced bacon) 2 onions, sliced 2 carrots, sliced into rounds 2 garlic cloves, crushed 250ml good red wine (ideally a Burgundy, or a rich local alternative) 250ml beef stock 2 tbsp plain flour 1 bouquet garni (or bay leaves, thyme, and parsley tied together) Olive oil Salt and pepper Cooking Method: Prep Time: 15 minutes Cook Time: 2.5–3 hours Prep the meat: Cut your beef into chunks (roughly 3–4 cm). Season with salt and pepper. Brown the bacon: In a large cast iron pot or casserole dish, heat a splash of olive oil and fry the lardons until golden. Remove and set aside. Sear the beef: In the same pot, brown the beef in batches until nicely coloured. Remove and set aside. Sauté the veg: Add the onions and carrots to the pot and cook for 5–6 minutes. Stir in the garlic and cook for another minute. Add flour: Sprinkle in the flour and stir to coat the veg. Deglaze and simmer: Return the beef and bacon to the pot. Pour in the red wine and beef stock until everything is just covered. Add the bouquet garni. Low and slow: Cover the pot with a lid and simmer gently on the stove (or in the oven at 160°C) for around 2.5 to 3 hours, until the meat is melt-in-your-mouth tender. Serve: Discard the herbs. Serve your Boeuf Bourguignon with buttery mashed potatoes, steamed baby potatoes, or fresh tagliatelle. Traditionally, clafoutis was made with the season’s fresh black cherries, left unpitted to add extra flavour. Over time, the recipe evolved, and today it’s common to use pitted cherries—fresh or frozen—making it even easier to prepare at home. At Halcyon Retreat, you can pick up fresh onions at the bustling market in nearby La Souterraine, and grab some rich, local cheese from the village deli to top off your soup. Using quality, fresh ingredients like these makes all the difference in this timeless dish. Why French Onion Soup? French onion soup is a classic that highlights the magic of simple ingredients transformed through slow cooking. Sweet caramelised onions, fragrant herbs, and a hearty beef broth come together to create a rich, warming dish. It’s perfect for chilly evenings or anytime you want a taste of traditional French comfort food. Try our recipe: Ingredients (Serves 2) 400g fresh onions, peeled and sliced (you can find great ones at the La Souterraine market!) 1 tbsp olive oil ½ tbsp flour 4 sprigs of fresh thyme 1 bay leaf 1 litre beef broth 2 slices of sourdough or country bread 80g grated Comté or Gruyère cheese Salt and pepper to taste Method Heat a medium-sized pot over medium heat. Add the olive oil, then the sliced onions, thyme, bay leaf, a pinch of salt (go easy since the broth can be salty), and pepper. Cook gently for about 20 minutes, stirring often, until the onions are soft and just starting to caramelise. Sprinkle the flour over the onions and stir well to coat evenly. Pour in the beef broth and bring to a boil. Lower the heat and simmer gently for another 20 minutes, allowing the soup to thicken and the flavours to deepen. Taste and adjust seasoning as needed. While the soup simmers, toast the bread slices under the grill until golden. Ladle the soup into oven-safe bowls, place a slice of toast on top of each, and cover generously with grated cheese. Place the bowls under the grill until the cheese bubbles and turns golden brown. Finish with a crack of fresh pepper and a sprig of thyme for garnish.
